Welcome to Sáenz Horeca, the complete supplier of food for hotel, restaurant and catering professionals. The ‘horeca sector’ needs collaborators who understand their concerns and professionals who appreciate a job well done. QUALITY AND SAFETY
Our quality department has one primary objective: to offer safe food. A laboratory performs physical-chemical and microbiological analyses of all products.
The HACCP system (Hazard Analysis and Critical Control Points) guarantees the innocuousness of the processes. All raw materials go through rigorous temperature, pH, cleaning and disinfection, storage and expiry checks. We participate in the UNE-EN-ISO Quality Management and Assurance System Implementation Programme.
FACILITIES AND PROCESSES
We put at your disposal a comprehensive meat processing complex with our own integrated feedlots, abattoir, cutting room, cold store, drying room for Iberian products and versatile storage area for sausages. We have exclusive cold stores for each animal species. In addition, the freezing process is always respectful with the meat.
The cleaning and disinfection (C&D) processes are always carried out at low pressure and a high flow rate, as established by European regulations. The efficiency of the C&D is periodically analysed and checked by an external laboratory.
THE COLD CHAIN
Sáenz Horeca’s distribution and delivery methods guarantee the maintenance of the cold chain throughout the process. For this purpose, we have our own fleet of refrigerated vehiclesand a computer system that detects and instantly displays any variation in temperature.
At the same time, we apply a flexible production and sales policy, adapted to the needs of each customer, which allows us to react quickly to your demands. We offer an agile and autonomous “door to door” delivery service in 24/48 hours.
INNOVATION AND TECHNOLOGY
We believe innovation is a tool that allows us to offer different market alternatives to our customers. The department of research, development and technological innovation, makes every effort to provide the best possible service to the demanding and innovative catering sector.
We also collaborate with the University of the Basque Country and with technological research centres. We develop new products and work on interesting projects such as the aforementioned “from the meadow to the table”, a project for complete traceability tracking.

Tracing a profession

Cárnicas Sáenz is born
“Cárnicas Sáenz, today Sáenz Horeca, made the dream I had imagined for so long with my wife and business partner come true”. And later on, we culminated this effort with the inauguration of modern facilities designed to strictly monitor and control the processes, using the most advanced technology and a team as loyal as they are professional.
The Pleasure of Meat
‘El Placer de la Carne’ (The Pleasure of Meat), an indispensable dictionary of terms, delicacies and other stories about beef, lamb and Iberian pork. This book was the finishing touch to a thrilling professional and personal story both in gastronomic and human terms.
Our 25th anniversary gave us the final push we needed to establish the Matías Gorrotxategui award for the best steakhouse in Spain, and the Florencio Sanchidrián award for the hotel establishment with the best ham platter.
Sáenz Horeca Araberri Basket Club
We start our sponsorship of the Araberri Basket Club, Vitoria’s popular basketball team that competes in the Adecco Oro league. We support sport and share the values of effort, sacrifice and teamwork.
